I enjoy baking more and more with my daughter, who has just turned 2.
Not that she is of much help in making pastries, even if she often wants to give me a hand (or her hand in the dough, depending on your point of view...), but above all she is in the middle of discovering different sweet flavors.
And as the saying goes "dogs don't make cats", I would say she has the same love of chocolate as her mother!
On this sweet afternoon, I chose to introduce him to the combination of two ingredients that I love: chocolate and raspberries, combined in a soft cookie to be enjoyed with a nice glass of milk.
(Ok, ok, raspberries are not in season, yes, but these are frozen. So you can enjoy them all year round...)
Cookies x12 (big cookies for big gourmands...)
- Preheat the oven to 180° conventional heat.
- In the bowl of the robot, beat 125g of soft butter, 160g of brown sugar, 1 whole egg previously beaten and 1 tsp of liquid vanilla extract.
- Gradually add 180g of flour, 35g of bitter cocoa powder and 1 tsp of baking soda, mixing between each addition.
- Finally add 100g of roughly chopped dark chocolate (the famous "chunks") and then 125g of raspberries. At this point, do not mix too much so as not to break the raspberries too much.
- Place small balls of dough on a baking sheet covered with baking paper. Space them about 5cm apart and flatten them slightly with your hand.
- Bake for 15 minutes. Leave to cool on the baking sheet for a few minutes then on a rack.

Hello, yes I put bicarbonate so that they have a little fluff. You can also put baking powder instead. See you soon
