


A cheesecake made with a very seasonal fruit, blackberry.
Cheesecake yes, but without cooking (except the biscuit) and served in small rectangular pieces called "bars" in English.
The texture is ultra-melting (I also published a short video on Instagram), and delicately sweetened by the use of white chocolate - there is no added sugar in my recipe.
Don’t hesitate to opt for a good white baking chocolate!
Blackberry and white chocolate are a perfect match in this dessert. Serve it cold and it's even better.

- 140 g English shortbread cookies McVities type
- 100 g soft butter
- 250 g white chocolate
- 250 g cream cheese philadelphia nature
- 250 g Greek yogurt
- 3 gelatin sheets Vahine
- 240 g full liquid cream
- 3 tbsp of milk
- Preheat the oven to 175 ° traditional heat.
- Make the biscuit base by crumbling the biscuits. Melt the butter in the microwave and mix with the crumbs. Pack everything in a pastry frame (about 35 x 25 cm) lined with baking paper and placed on a baking sheet. Bake for 7 minutes.
- Melt the white chocolate in a double boiler and set aside.
- In a container, relax the cream cheese and yogurt. Mix well to homogenize. Then incorporate the melted white chocolate.
- Soften the gelatin in cold water.
- Whip the liquid cream in a food processor to obtain an airy and light texture. Little by little, incorporate the whipped cream into the previous mixture using a spatula.
- In a saucepan, heat the milk then pour the drained gelatin, mix well. Pour the milk into the cheesecake maker and mix.
- Pour the cheesecake maker on the biscuit base, place a dozen blackberries on the cheesecake, press them down a little. Refrigerate at least overnight. Keep a few blackberries for decoration and cut the cheesecake into small rectangles for serving.

:-D I was looking for a blackberry cheesecake recipe, this is perfect! However, can I use fromage blanc instead of Greek yogurt? And speculoos instead of shortbread?

Thank you for this recipe, it was delicious, my guests loved it! I made it with frozen blackberries in it, and instead of blackberries I made a raspberry coulis on top. Plus it's very easy to make, I'm putting this recipe in my best of!
